While cooling the dough, the flour is moistened, the oil hardens, prevents gluten from developing in the flour, the dough “relaxes” and becomes soft, supple and elastic. Such a dough does not stick to your hands, it is easier to work with, and it does not shrink when baking. After cooling the dough, the finished cookie becomes more tender.
Molding
- Spread a sheet of parchment paper on a baking sheet. Turn the oven on to a temperature of 180 ° C. Divide the chilled dough into small, identical pieces, slightly smaller than a walnut. For uniform division of the pieces, you can roll out the dough with a long, equal thickness sausage, and cut with a knife into equal parts. And you can pinch off pieces on the eye, but then the cookies can turn out to be different in size.
- Roll round balls from each piece with your hands and evenly distribute on a sheet of parchment. When placing cookies on a sheet, you need to consider that during baking, the balls will spread out wide. To avoid sticking, the workpieces should be stacked with each other at a distance of at least 4-5 cm.
Baking
Place a baking sheet with evenly spread dough balls in an oven preheated to 180 ° C for 20-25 minutes. Bake until golden brown.
