Step cooking
Pre boil the beans. Soak red dry beans for at least 4 hours. Soaking will reduce the cooking time of the beans and make them softer. After time, rinse the beans in several waters and place in a pan. Add water three times more beans and bring to a boil. From the moment of boiling, cook the beans over high heat, and then reduce the heat to a minimum and cook until cooked. Depending on the variety of beans, this will take 1.5-2.5 hours. At the end of cooking, salt the beans.
- Peel and finely chop the garlic (4 cloves) with a knife.
- Red pepper (1 piece), peel the seeds and the stalk and grind into small cubes.
- Onion (2 large onions) cut into medium-sized cubes.
- Place the pan on the stove and heat well. Put butter (40 grams) in a pan, let it melt and fry the onion on it until cooked, stirring it occasionally.
- Put the pre-boiled beans (0.5 kg) into the pan and pour it with clean water (200 ml). Place the pot on medium heat. Add fried onions, chopped pepper and chopped garlic to the beans. Mix well.
- Pour wine vinegar (a tablespoon) into the pan and add the seasoning of hops-suneli. Mix well again.
- Sauté the beans for 10 minutes, remove the pan from the heat and grind the contents of the pan with a dip blender to a puree state.
- The classic red bean lobio is done.
Lobio feed options
If you serve hot red bean lobio, this will be the main course. Cold lobio is considered an appetizer, and if you make a very sharp lobio or add walnuts to it, then it can be served as a dip sauce, which is dipped in pieces of pita bread, corn tortillas or thick corn porridge. Before serving, garnish with finely chopped cilantro. Serve adjika or tkemali separately. Also, pickled vegetables are served with lobio: cucumbers, peppers, garlic.
