Ingredients
- Broth (chicken or vegetable) - 500-600 ml
- Pumpkin - 400 g
- Onions - 1/2 pcs.
- Milk - half a cup
- Fresh ginger - 1/2 tsp.
- Garlic - 1-2 cloves
- Ground cinnamon - a pinch
- Nutmeg - a pinch
- Ground black pepper to taste
- Thyme - to taste
- Salt to taste
- Bacon - 2-3 slices
- Grated hard cheese - to complement
- Chives - to taste
- Carrots (small) - 1 pc.
- Sour cream - 1 tbsp. l
Step cooking
- Cook chicken or vegetable broth in advance.
- Wash the pumpkin, cut and peel the seeds and fibers. Cut into slices and peel the skins. Cut into small squares. The smaller we chop the pumpkin, the faster it will boil.
- Wash, peel the carrots and rub on a coarse grater.
- Peel the onion and cut into thin slices.
- We clean the ginger root and cut into thin strips.
- Peel and crush the garlic.
- We put the pan with the broth on the fire and bring to a boil. Pour pumpkin slices into the pan. If the broth is not salty, then add salt to taste.
- Pour chopped ginger into the pan.
- Separately put the frying pan on the fire. Pour a little vegetable oil and put the garlic.
- Add the onion to the pan, mix.
- Add carrots to onions and garlic. Fry everything until golden brown, stirring. You can add some salt.
- Cook the pumpkin until soft, when it begins to break down into fibers. It takes 7-10 minutes. When the pumpkin is boiled, drain the liquid into a separate bowl.
- Pour roasted carrots, onions and garlic to the pumpkin. Pepper to taste, add thyme, nutmeg and cinnamon.
- Grind everything in mashed potatoes with a hand blender. If there is no blender, you can grind everything through a metal sieve.
- Pour the broth in small portions and bring to the required consistency. Add milk. Optionally, instead of milk, you can take cream.
- We try mashed potatoes to taste. If necessary, add salt, pepper and spices. We put the pan on the fire to boil the soup.
- At this time, put the bacon on a preheated pan and fry until crisp.
- Pour soup into a plate.
- Cut the fried bacon into thin strips.
- Finely chop the green onions.
- Pour into a plate grated cheese, chopped bacon and onions. If desired, add sour cream. Enjoy your meal!
