Ingredients
- Potato - 6 pcs. (700 g)
- Onions - 1-2 pcs.
- Chicken Egg - 1 pc.
- Wheat flour - 2-3 tbsp. l
- Salt - to taste (0.75-1 tsp.)
- Freshly ground pepper - to taste
- Vegetable oil - 4-6 tbsp. l
- Sour cream of any fat content - optional
Step cooking
- Peel, wash and grate the smallest grater 700 g of potatoes (6 medium-sized potatoes).
- On the same grater, grate 1-2 peeled onions, previously peeled and washed. Onion gruel will protect potatoes from darkening. All this can be done faster if you have a food processor with a nozzle for potato pancakes.
- Add 1 egg to grated vegetables, mix well and beat lightly with a fork.
- Pour 2-3 tbsp. l sifted flour, salt and freshly ground black pepper to taste.
- Mix all the ingredients well again.
- Heat 1-2 tbsp in a pan l vegetable oil. Spread potato dough with a tablespoon and shape oval or round potato pancakes.
- After the potato pancakes are browned on one side (3-4 minutes over medium heat), turn them over with a spatula and cook for another 3-4 minutes.
- Put the finished pancakes on a plate and serve hot with sour cream. Enjoy your meal!
Useful Tips
- For the preparation of potato pancakes, potato varieties that are quickly boiled and contain a lot of starch are best suited: Aurora, Nevsky, Sineglazka.
- Young potatoes are not suitable for potato pancakes: it is still too watery and may contain nitrates. That is why it is most often boiled whole or sliced, and it is unsuitable for mashed potatoes or frying.
- Draniki is convenient to fry in a large amount of oil in a cast-iron pan. If you choose a non-stick pan, then the oil will go much less.
- You can fry potato pancakes in a waffle iron: grease its working surfaces with vegetable oil, put 1.5-2 tbsp. l potato dough and bake for 1-2 minutes.
- A slow cooker is also suitable for their preparation: pour 1 tbsp into the bowl. l vegetable oil and put the dough with a tablespoon so that the pancakes do not touch each other, turn on the "Frying" mode and cook for 5 minutes. with the lid closed. Then turn over and cook for another 5 minutes.
- Sour cream is served as a sauce for potato pancakes. You can add grated garlic, spices, chopped spicy greens to it.
- Potato pancakes with filling are very tasty: put thin pancakes from potato dough into a frying pan in hot oil, distribute a small amount of meat, mushroom, cottage cheese or minced meat on top, and close the top with potato dough. Fry for 5 minutes. over medium heat, turn over, fry for 3 minutes, then close the pan with a lid and cook for another 3 minutes.
