Step cooking
- Cut into thin strips across the fibers 450 g of beef pulp. Now it’s very difficult to find fresh beef tenderloin, which is perfect for this dish. Therefore, you can take fresh pulp of beef (veal) without veins. To make the meat softer, we recommend to beat it a little. To do this, cover uncut meat with cling film and beat off with a kitchen hammer. Thanks to the cling film, the pieces of meat will not fly around the kitchen and the hammer will remain clean.
- Pour 100 g of flour into a convenient dish and bread the meat in it, shake off the excess. Thanks to the flour, the beef will retain its juiciness, and after frying it will have a beautiful, golden crust. You can skip this item if you wish.
- We send the pan to the fire, pour one tablespoon of vegetable and butter, let it heat. We clean the onion, cut into thin half rings and send into the pan. Fry the onion until golden brown and remove from heat.
- We put another pan on the fire, let it heat, pour one or two tablespoons of vegetable oil and pour the meat. Fry over high heat until golden brown, stirring occasionally. It is better to spread it in one layer, so that it is well browned on all sides. Fry the beef for 5-7 minutes over high heat.
- Then add the fried onions, 250 g of high fat cream. We used cream with porcini mushrooms with a fat content of 23%. You can take any, the main thing is that their fat content is at least 20%. Instead of cream, you can use sour cream or milk. If stewed in milk, you can add a little flour to make the sauce thick.
- Add one teaspoon of mustard, mix everything. Add salt, black pepper, ground paprika to taste, mix. Simmer for another 1-2 minutes and remove from heat. You can put any other seasonings, it's all at your discretion. To give the finished dish a pleasant aroma, add a whole clove of garlic, bay leaf. After stewing, remove the garlic and bay leaf.
- Beef stroganoff with cream is ready, can be served. For meat, you can offer a side dish of potatoes, cooked in any form, any cereal or pasta. It goes well with beef stroganoff with a salad of fresh vegetables.
