Step cooking
- To prepare this dish, the most important thing is to choose the right meat. Beef tenderloin is best, it is soft and tender. But if you don’t have such meat, take a beef shoulder. Choose a less sinewy piece. Wash and dry the meat well with a kitchen towel.
- Then we cut two onions in half rings 2 - 3 mm thick.
- It is important to cut the meat across the fibers with a thickness of 0.5 cm, then cut each piece into thin strips of arbitrary length.
- We warm the pan well, pour 3 tbsp. l odorless vegetable oil, spread the chopped meat and fry for 3 - 5 minutes over medium heat so that the meat is browned and sealed.
Important! Meat should be laid in a single layer during frying. If your pan is small, the meat should be fried in parts so that it is fried and not stewed. - Then salt and pepper the meat to taste. You can add finely chopped garlic or any spices and seasonings to your taste.
- We put the finished meat in a deep bowl or on a plate so that it rests.
- Next, heat the pan, add 30 g of butter and spread the chopped onion, fry over medium heat until golden brown.
- Let's make the sauce. In a saucepan, mix 100 ml of cream 20% and 100 g of sour cream 15%, bring to a boil, but do not boil.
- In order for the sauce to acquire a thick consistency, add 1 tbsp. l potato starch. Pour starch into the bowl and pour 100 ml of cold water, knead thoroughly so that the starch is completely dispersed. If you like a thinner sauce, you don't need to add starch.
- Diluted starch is added to the stewpan to the rest of the ingredients.
- We also add a pinch of nutmeg and 70 g of tomato paste, mix to make the mass uniform, cook the sauce until thickened.
- In the pan to the onion, transfer the meat and pour the finished sauce.
- We simmer the meat under the lid over low heat for 20 to 60 minutes, stirring occasionally. The longer the meat is stewed, the softer it will turn out. Choose the time of readiness to your taste.
- Put the finished dish on a plate and serve it on the table, you can sprinkle with any herbs. Beef stroganoff is combined with any side dish. Enjoy your meal!
