Ingredients
- String Beans - 1 kg
- Ripe Tomatoes - 300-400 g
- Bell pepper - 0.5 kg
- Onions (large size) - 2 pcs.
- Garlic - 3-4 cloves
- Parsley - 1 bunch
- Cilantro - 1 bunch
- Basil - 1 bunch
- Walnuts - 100 g
- Water - 1-1.5 liters
- Vegetable oil - 4-5 tbsp. l
Step cooking
- Wash the tomatoes (300-400 grams), pour over boiling water and, having peeled, cut into small cubes.
- Wash the bean pods, cut the hard ends and cut them into pieces 3-4 cm long.
- Place a pot of water (1-1.5 liters) on the stove and let the water boil. In boiling water, put the chopped beans into pieces and cook for 8-10 minutes.
- After the cooking time is over, remove the beans with a slotted spoon from the pan onto a plate and leave to cool.
- Peel and onion (2 pieces) and cut into medium-sized cubes.
- Put the pan on the stove, pour vegetable oil (4-5 tablespoons) into it and let the oil heat up well. Put the onion in the heated oil and fry it, stirring occasionally.
- Bell pepper (0.5 kg), wash, remove the stalk and seeds, Cut the pepper into large pieces and put it on the onion in a pan. Mix everything. Immediately after adding pepper to the pan, put finely chopped tomatoes and peeled garlic (3-4 cloves), passed through a press. Mix everything and salt to taste.
- Cover the pan and simmer the lobio for 7-10 minutes. Rinse fresh herbs of parsley, cilantro and basil (1 bunch each) and cut very finely.
- After 10 minutes, put the green beans and chopped greens in a pan. Mix well and simmer for 3-5 minutes. At the end of cooking, according to the classic recipe, dress lobio with walnuts (100 grams) crushed in a mortar.

You have learned the classic recipe for making lobio from green beans. Fresh tomatoes are best for a dish, but you can replace them with tomatoes in your own juice or with a good tomato paste. Together with bell pepper, you can add a little red hot pepper, finely chopped it, or vice versa cut into only 2 parts, which should be removed after cooking.
