Step cooking

- Peel 1 onion and cut into quarters or eighths. We pass the onion through a meat grinder with a fine wire rack and use gauze to squeeze as much juice out of the resulting mass as possible so that the minced meat is drier and does not fall apart during cooking.
- Separate 1 egg white from the yolk and beat it with a broom or spoon until a lush white stable foam is formed.
- In a separate container we combine all the prepared ingredients: meat, onion, rice, egg white. We also add salt, ground black pepper and other spices to taste, if necessary. Mix everything thoroughly so that the ingredients disperse well.
- We make medium sized meatballs from the minced meat. It is better to make them the same so that they are evenly cooked. Several times we form a ball from them, and then a flat cake so that the minced meat sticks better and excess air comes out of it.
- To make a delicious crust, roll the meat blanks in flour, which is preferable, or breadcrumbs.
- Pour 75-100 ml of vegetable oil (approximately 1 cm of oil in height) into a deep pan and heat it. We put meatballs and fry them for 2-3 minutes on each side, periodically turning them over with a spatula or shaking the pan, if cooked under the lid.
- When the meatballs are lightly browned, transfer them together with the juice and oil from the pan to a deep glass baking dish and send them to the oven preheated to 180 ° C for 15 minutes.
- At this time, put 100 g of pitted cherries, 2 tbsp. In a saucepan or a small saucepan. l sugar and some water.
- We cook this mixture, stirring occasionally, until it thickens and excess liquid evaporates from it.
- We interrupt the slightly cooled cherry mass in a blender and get a great sweet and sour sauce for meatballs.
