Step cooking
- Fresh cucumbers (4 pcs.) Cut into small cubes. We try to make them as small as possible.
- In the same way, we cut 400 grams of boiled sausage, cutting it into small, neat cubes of the same size. So the dish will look more aesthetically pleasing and appetizing.
- Pre-boil 5 hard boiled eggs. It is necessary that they be as tight as possible, and when cutting, they form elastic cubes. Shred eggs as finely as all the other components.
- Boil 5 small potatoes. You don’t need to digest them strongly, otherwise when cutting, the potato will sprawl and even cubes will not come out.
- A bunch of fresh dill is washed under running water, dried and chopped finely.
- We put all the prepared components in one deep container. Mix so that all the ingredients are evenly distributed throughout the mass.
- There we add 200 ml of liquid sour cream, salt and pepper to taste. If you want to get okroshka with a characteristic light acidity, then add ¼ teaspoon of citric acid or pour fresh lemon juice on it. However, this may not be necessary. Thoroughly mix the resulting mass, and let it stand for 5 minutes.
- After we fill in a container with okroshka 3 liters of cold water and mix everything with a spoon. A quick and tasty classic okroshka is ready to be served.

- If you decide to treat yourself to okroshka in the winter and spring, when fresh cucumbers have an unbearable price, they can easily be replaced with salted cucumbers. At the same time, it is better not to salt the finished dish. Frozen broccoli is also good.
- The meat component can be absolutely any. You can add boiled chicken or pork, smoked sausage, ham or balyk. Thus, each time you prepare cold soup, you will get different tastes.
