Step cooking
Preparatory stage
- Prepare all the necessary ingredients. The first thing to do is bring 1.5 l of water to a boil and cool in the refrigerator. This is necessary so that by the time water is added to the okroshka, it is cold. Rinse and boil 300 g of potatoes and 5 eggs until tender.
- Rinse greens under running water, rinse 350 g of cucumbers and 140 g of radish and remove tails.
- Cool potatoes and eggs and peel.
Cooking okroshka
- Cut potatoes, 2 eggs and 3 squirrels into a small cube of the same size. Mash 3 egg yolks with a fork and add to the rest of the ingredients. This will make the okroshka thicker and give it a beautiful yellow tint.
- Cut cucumbers and radishes in the same cube.
- Slice the sausage in the same way.
- Finely chop 90 g of green onion, 30 g of parsley and 30 g of dill.
- When all the products are sliced, add to them 1 liter of kefir, 3 tbsp. l sour cream and mix well. Add approximately 1 tsp. salt, but focus on your taste.
- Lastly, add pre-chilled boiled water to the okroshka. At your discretion, dilute okroshka with water to the desired density.
- Leave the okroshka for 2-3 hours in the refrigerator, it should be infused. After 2-3 hours, the window is ready to serve. Enjoy your meal.
Cooking and serving options
- Sausage can be replaced with ham or meat.
- In okroshka, you can add spices at your discretion, for example, black or red ground pepper, as well as mustard.
- Instead of kefir, you can take tan, airan or yogurt. In this case, it will not be necessary to dilute the okroshka with water.
- Before serving, chopped garlic can be added to the plate.
- For a beautiful color, in the okroshka you can add 1 small boiled and then beet grated on a fine grater.
- Serve okroshka with rye or whole grain bread.
- Some restaurants serve several separate plates with chopped ingredients for okroshka and a decanter with dressing, so that the guest can make his own meal. This feed option is easy to repeat at home.
