Step cooking
- Prepare jars and lids, namely rinse and sterilize them. Wash 3 kg of sweet pepper, peel it from the core and seeds. Cut in the form of straws (classic version), rings or half rings - in any convenient and suitable way, to taste.
- Peel 4 medium-sized bulbs from the husks and cut thinly into half rings. Divide the head of garlic into slices and finely chop them into rings. Next, you need to remove the peel from two kilograms of tomato. In order to make it easier to do this, you need to make incisions crosswise with a knife on each tomato, and then pour the entire amount with boiling water. We also allow the option not to remove the skin, but in this case unpleasant pieces will fall into the lecho.
- In a "bath" of boiling water, tomatoes must be held for about 10 minutes. After which, drain the water and easily remove the film with a knife.
- Twist the peeled tomatoes in a meat grinder or chop in a blender bowl until a smoothie is smooth.
- Pour the resulting mass into a deep pan, pour 1 glass of sugar, 2 tablespoons of salt (without a hill) and a glass of refined sunflower oil to it. Throw in chopped onion and pepper, mix the entire contents. Put the pan on the stove, bring to a boil, then reduce the heat and cook for 30 minutes, stirring occasionally. It should be noted that during the cooking process the vegetables will become softer and decrease in volume.
- After half an hour, add the garlic rings to the rest of the ingredients, after which after 5 minutes add a little less than one tablespoon of vinegar 70% and stir. Its taste in the dish will not be felt, it is needed only for sterilization. Boil another 3 minutes.
- Using a scoop, pour the lecho on the banks to the very top and tighten the lids.
- As a result, we got a stunningly tasty, natural lecho according to the classic cooking technology with the addition of onions for sweetness. Preservation can be stored for more than one year, but, as a rule, it does not remain for so long. Thanks to the addition of vinegar, the cans will not explode and will stand long enough. On the palate, the lecho is slightly sweet, moderately sharp and has a pronounced tomato flavor.
