Step cooking
- Sift a kilogram of wheat flour into a large bowl.
- Add 600 ml of room temperature water to the flour and knead the dough. At this stage, the dough must be kneaded for 15-20 minutes.
- Form the dough into a lump, cover with a lid or cling film and let it rest for 15 minutes.
- Take the dough, knead it for 2-3 minutes, cover and leave for another 15 minutes.
- Take the dough again, knead for 2-3 minutes and divide it into 4 parts.
- From each part it is necessary to roll the ball and roll it into a cake 1 cm thick.
- Grease each cake with vegetable oil on both sides.
- Fold the cakes on top of each other, cover with cling film and leave for 10-15 minutes. At this stage, you need to put a pot of water on the stove, so that by the time the noodles are formed, it has already boiled.
- After 15 minutes, take one cake, cut it into strips 0.5 cm thick.
- Stretch each strip 80-90 cm, then fold three times and stretch again as well. The total length of one strip is 2-3 m.
- Throw the stretched dough into boiling water immediately. One serving of noodles is cooked for 6-8 minutes.
- Remove the finished noodles from boiling water using special tongs or a slotted spoon. The noodles are ready, serve at your discretion, bon appetit.
Cooking Tips
- For such noodles, a prerequisite is flour with a high gluten content of at least 30%. If you know that there is not enough gluten in your flour, or you don’t know at all what quality your flour is, add 170 g of corn starch to the test, replacing it with this amount of flour and 15 g of soda. Sodium carbonate (soda) contributes to the release of gluten in the dough, and this will help the noodles to stretch better and not tear.
- If desired, add a little salt to the dough, or boil in salted water.
- The warmer the dough, the better it will stretch, so intensively knead the dough, warming it with your palms.
- Serve Chinese noodles with shrimp, squid, mussels or a mix of seafood.
- You can make noodles with stewed vegetables: tomatoes, sweet and hot peppers, onions, carrots, zucchini and other vegetables are suitable for your taste.
- Pour the noodles with meat broth with pieces of meat, and you get a light soup.
- Any meat dressing for such noodles will also be appropriate. For example, chicken with soy sauce or pork in sweet and sour sauce.
- Garnish the finished dish with sesame seeds or finely chopped herbs.
