Step cooking
- First, we are preparing dough for quiche. In a deep bowl, pour 250 g of sifted flour through a sieve, add 125 g of butter and one chicken egg. Mix all the ingredients thoroughly with your hands until you get a firm dough.
- We leave the dough to stand, and at this time we begin to prepare the filling for the open fish pie. On a wooden board we cut leek into thin rings. We spread it on a baking sheet or form, and cook it in a double boiler on the "Stewing" program. If there is no such technique, then the onion can be slightly stewed in a pan under a closed lid.
- Cut into small cubes 150 g of salmon and pike perch fillet. If you couldn’t buy ready-made fish fillet in the store, then we buy a whole carcass and cut it ourselves.
- Place the diced fish in a deep bowl, adding the stewed leek.
- In a separate bowl, mix 4 egg yolks and 250 ml cream. Stir the ingredients thoroughly using a whisk. Pour a little flour on a flat surface, put the dough and roll out with a rolling pin so that it becomes round.
- The resulting circle from the dough is shifted to the bottom of the split baking dish. To prevent the dough from spreading, it is better to shift it, carefully twisting it onto a rolling pin.
- On top of the dough we spread the sliced salmon fillet and pike perch with leek. Fill the onion-fish filling with yolk and cream.
- Rinse the tomato well and cut it into small slices. Remove the pulp of a tomato.
- Put sliced tomato slices into a mold on top of the fish, and between them evenly distribute 100 g of broccoli. Grate 50 g of gouda cheese on a coarse grater and sprinkle the quiche on top. It is possible to use any other hard cheese that you prefer. You can also add a little salt to your taste. We put the open pie in the oven preheated to 190 degrees for 25 minutes.
- We take the finished quiche with fish from the oven, cut into portions and serve with a slice of lemon and a sprig of fresh herbs. It is possible to use an open pie not only in hot, but also in cold form, and at the same time, it will be no less tasty.
