Step cooking
Dough
- Before you start making the pie, you need to knead the dough. To do this, sift 200 g of premium flour into a deep bowl. Cut 100 g of cold butter into small pieces and add to the flour.
- Using a fork, squeeze the butter and flour, then grind with your hands into the fine flour crumbs.
- Add about a teaspoon of salt to the bowl and mix well.
- Divide one egg into yolk and protein. Add the yolk to the flour and stir well with a fork.
- Pour into a bowl about 2 tbsp. l cold water and continue to grind the dough, collecting it into one lump. More or less water may be needed to knead a uniform, dense dough.
- Divide the finished dough into two unequal parts: the larger one for the base of the pie, and the smaller one for its sides. Separately wrap the dough in bags or plastic wrap, and put in the refrigerator for 30-40 minutes.
Filling
- In the meantime, prepare the filling. Cut the salmon steak into two parts, separate the skin and remove the bones. Then chop the fish into small pieces.
- Salt to taste and sprinkle with lemon juice. Stir the fish and leave to marinate.
- Boil broccoli water in a saucepan. Without defrosting broccoli, dip it in boiling water and cook for about 5-6 minutes.
- Then put on a plate and let cool.
- On a coarse grater, rub about 100 g of mozzarella cheese. At will, you can take any other semi-hard cheese.
- In a deep bowl, beat 2 eggs with a fork, then add 250 g of sour cream to them and mix well until smooth. Optionally, you can add a pinch of salt, but do not forget that the fish and cheese are salty.
Cake making
- Sprinkle the work surface with flour, remove most of the dough from the refrigerator and roll it into a round layer to the size of your mold. Then transfer the dough into a mold and flatten on the bottom, and cut off the excess dough.
- Use a fork to spread the base over the entire surface.
- Put the mold in the oven and bake for about 10-15 minutes at 200 ºС. After that, let it cool completely.
- Take a smaller portion of the dough and mix it with the scraps from the base. Make a sausage from this test so that it matches the circumference of the form.
- Then lay it out on the edge of the base for the cake and press it against the walls of the mold to make sides 3-4 cm high.
- Now you need to fill the dough with filling. At the base, evenly distribute half the fish and half the broccoli, sprinkle with half the grated cheese.
- Then lay out the remaining fish and broccoli in a second layer.
- Fill everything with sour cream filling, and sprinkle with the remaining cheese on top. If the fish or broccoli stick out too much, lightly drown them with a fork.
- Bake the cake in an oven preheated to 200 ºС for 35-40 minutes. For the last 10 minutes of this time, place the mold a little higher in the oven to make the top brown.
- When ready, take out the cake and let it cool slightly. Remove the sides from the warm pie and transfer to the dish. You can decorate the quiche with several branches of greenery.
