Step cooking
- In order to prepare a delicious home-made ketchup, you will need to take 3 kg of red tomatoes, rinse them thoroughly and cut them into small cubes. If you are not too lazy and peel the tomatoes, your ketchup will be more tender in consistency. To get rid of the peel, you need to dip the tomatoes in boiling water for a few minutes, and then transfer them to ice water. Thus, the skin will easily move away from the pulp.
- 500 g of apples should also be cut, peeled, pitted with seeds and cut into medium-sized cubes. If you like sweeter ketchup, then you need to choose red apples, if you prefer to hear sourness in this product, then green fruits will suit you. Take 250 g of onion (about one and a half onions), peel it and cut into a small cube.
- Place all chopped ingredients in a pan with a thick bottom and put on low heat.
- Cook vegetables and fruits until the onions are soft, then beat all the ingredients with a submersible blender and cook the mixture until thick. The approximate cooking time is 50 minutes, however, it can vary depending on how thick ketchup you want to get. The longer you digest the mixture, the thicker it will be. During cooking, ketchup must be constantly stirred so that it does not burn. 5-10 minutes before the end of cooking, add 1.5 tbsp to the mixture. l salt, 1.5 tbsp. granulated sugar, as well as red and black ground pepper to taste and 50 ml of apple cider vinegar. Also, if desired, you can add a little garlic to ketchup.
- Next, sterilize the required number of cans of the desired size, and also boil the lids. Lay out the cooked ketchup on dry sterilized jars, cover the jars with a lid and roll them up using a special key.
- Turn the finished preservation upside down with a lid, wrap it with something warm and leave it until the jars are completely cooled. This ketchup can be used at any time of the year for the preparation of various sauces.
