Step cooking
- First you need to take 100 g of butter and melt it in a water bath. If you have a microwave, you can use it. After this, you need to set the oil aside and allow it to cool to room temperature. Now we take 100 g of raisins and soak it in boiling water for about 15 minutes. Meanwhile, in a deep plate, mix 2 eggs, 150 g of sugar, 1 tsp. vanilla sugar and a pinch of salt. All the ingredients are mixed well with a whisk.
- Then, in the resulting homogeneous mixture, we gradually introduce melted butter and kefir with a volume of 130 ml. Again, thoroughly beat with a whisk for 1-2 minutes.
- Steamed raisins are dried with a paper towel and sent to a kefir-oil mixture.
- Next, take 1 medium lemon and rub about 20 g of its zest. Then we send the zest to the rest of the ingredients. She will give the future cupcakes a delicious aroma. In a separate bowl we combine 230 g of flour and 10 g of baking powder.
- Then we pass the flour through a sieve directly into the liquid mixture. Then mix everything well and get the finished dough.
- Fill the cupcake forms with dough for about 2/3 of the total volume and place them on a baking sheet previously lined with parchment paper. If you use aluminum molds, they will need to be greased with vegetable oil, or even better - put paper blanks in them. For silicone molds, oil is not required.
- Muffins need to be baked at 180 degrees for about 30-35 minutes. Look for the beautiful ruddy color of baking and dry toothpick.
- Allow the muffins to cool slightly and remove them from the mold. If you wish, you can sprinkle the finished baking with powdered sugar.
