Step cooking
- Break 4 eggs into a deep container and beat them with a whisk or mixer. Add sugar and whisk again until bubbles begin to appear on the surface and the sugar dissolves.
- Add 15 g of baking powder for the dough and mix thoroughly.
- Pour 130 g of odorless sunflower oil and 150 g of kefir into the egg mass. Whisk. Add 400 g of sifted wheat flour and mix thoroughly again. After that, add about 3 tsp. candied fruit. You can buy already chopped, or cut yourself into small cubes. Also, if desired, you can use raisins or any other chopped dried fruits, for example, dried cherries, dried apricots, cranberries, prunes or even dates. If you use raisins, it is better to rinse thoroughly first, then pour boiling water and leave to swell for 10-15 minutes. After that, drain the water and place it in a colander or paper towels to get rid of excess fluid.
- After that, gently mix everything with a spoon. If desired, you can add a few candied fruits.
- Grease a cupcake baking dish with butter and pour the dough into it. We are trying to distribute candied fruits in the whole form. If desired, you can put the dough in smaller forms to get portioned cupcakes. In this case, they should be filled in 2/3 and baked for about 20 minutes, depending on the size of the molds and the capacity of the oven.
- Preheat the oven to 180 degrees. Put the mold in a well preheated oven and bake for about 40 minutes. Cooking times may vary slightly in one direction or another, depending on the characteristics of your particular oven. The readiness of the cake can be checked by piercing it with a wooden skewer. If the skewer remained dry, then the cake was well baked. You should not bake this cake at a higher temperature in order to shorten the cooking time, because on the outside it can start to burn, and inside it can remain damp. Put the finished cupcake on a plate and sprinkle with powdered sugar. Serve on the table with any drinks. Also, sliced pieces can be poured with syrup or dipped in any jam. Enjoy your meal.
