Step cooking
- Sift 560 g of wheat flour into a deep container for kneading dough.
- Sift 85 g of cocoa and 25 g of baking powder, 10 g of baking soda into the same container. Add 1 g of salt. Mix thoroughly.
- Add 600 g of sugar and mix again.
- Rub the zest of 2 oranges on a fine grater. Squeeze the juice of one large orange using a special citrus juice squeezer. Pour into a container 240 g of odorless vegetable oil, the juice of one large orange and the zest of two oranges.
- Next, add 700 ml of warm water and knead everything thoroughly. Please note that when you prepare the baking dish, the dough must be stirred occasionally.
- In the baking dish of small muffins, we lay out paper inserts and, using a ladle with a spout, pour dough into them. Fill the molds in 2/3.
- Part of the dough is poured into a large cake pan, previously lubricated with vegetable oil and sprinkled with cocoa.
- And the rest is distributed in medium-sized tins. All forms are also filled in 2/3.
- Preheat the oven to 200 degrees. We put blanks for muffins in a preheated oven for 15-20 minutes, depending on the size of the mold. The readiness of the cupcakes is checked using a wooden skewer. We pierce the cupcake with it, and if the skewer comes out clean, then the dough was baked properly. Baking times may also vary depending on the characteristics of your particular oven.
- If you cook in large form, you need to reduce the temperature to 180 degrees and bake for 40-45 minutes. If you bake the dough in this form at high temperature, there is a high probability that it will start to burn on the outside, while everything inside is still moist.
- If desired, the finished cupcakes can be decorated with white chocolate, having previously melted it in a water bath or in a microwave oven and transferred to a pastry bag or a clean bag. Also, you can sprinkle the finished cake with powdered sugar.
