Step cooking
- Mullet should be cleaned from scales. It is convenient to do this with a special fish scaler, but you can also use a simple knife. Remove the gills, free from the insides (we do this carefully so as not to damage the gallbladder, otherwise the fish will be bitter) and rinse thoroughly. This is perhaps the most time-consuming and troublesome part of the recipe.
- Then everything is very simple: put the prepared fish on a baking sheet, on which we will bake it.
- Take 1 tsp. salt and carefully rub the fish inside and out, not forgetting to pour a little into the gill slots.
- From the stalks of 1 bunch of parsley, we chop off the leaves and stuff them with the mullet’s abdomen (it is not necessary to chop the parsley).
- Cut the garlic cloves into circles and evenly spread them inside the fish.
- Pour olive oil generously from above (50-60 ml) - this will give the dish an appetizing color and aroma, and also will not let it burn.
- Preheat the oven to 180 ° C and put the mullet to bake. After 30 minutes carefully flip it over to the other side with a spatula and leave it in the oven for another 10 minutes.
- We will lay the finished fish on portioned plates, sprinkle with chopped herbs and serve with lemon slices. You can add a glass of dry white wine. You can choose a side dish for baked mullet to your taste - vegetables, pasta, rice. But in general, this dish is self-sufficient, tasty in itself.
Important! To choose a quality mullet, remember that fresh fish:
- eyes are convex, without muddy spots;
- the scales fit snugly to the carcass, there are no damages, spots, it shines and shimmers in the light;
- the fingerprint immediately disappears;
- if you are not sure about the freshness of the fish, it is better not to buy.
