Step cooking
- Boil whole large potatoes, and taking it out of the water, let it cool slightly so that all excess moisture is gone. Mash warm potatoes with a pusher in mashed potatoes without lumps. Pour in a dry mixture of herbs (a tablespoon) in olive oil (3 tablespoons) and mix. Pour the herbal butter into the potato pan.
- Rinse the greens (a bunch of green onions, a large bunch of parsley and dill), dry and chop as finely as possible.
- Add finely chopped greens to the potato pan.
- Salt and pepper the mixture to taste. It will take about 2 teaspoons of salt and a teaspoon of black pepper. Sift flour (glass) into a potato pan and mix the ingredients first with a spoon or spatula and then with your hands.
- Dust the surface of the table with flour and lay out the potato dough. Sift flour on top and knead well with your hands.
- When the dough stops sticking to your hands, then it's ready. Tear off small pieces from the resulting dough and first form balls out of them, and then roll thin flat cakes with a diameter under your pan. Sprinkle the dough well with flour so that the cakes do not stick to the rolling pin.
- Having rolled some cakes, proceed to frying them. You can fry these cakes on a grill or grill pan without using oil, but you can fry them in an ordinary pan, adding a little vegetable oil. In both the first and second methods of frying, the cakes are delicious.
- To fry in a pan, heat the pan, add a little vegetable oil, heat it well and spread the tortilla. Fry on one side until golden, and then turn with a spatula or tongs on the second side, and also fry until beautiful golden color.

Potato cakes can be eaten as an independent dish, serving various sauces to them: tomato, sour cream, cream, or use them instead of pita bread for homemade dishes such as falafel or shawarma.
