Step cooking
- We start cooking potato pancakes with the main step in any recipe - with peeling vegetables. Peel potatoes, carrots, onions and garlic. We wash all this in water. We also wash the greens and put it on a napkin - drain and dry. On a cutting board we cut potatoes into large pieces. The pieces should be such that they fit into the auger of the meat grinder. We do the same with onions and carrots.
- We install a meat grinder and pass through it chopped potatoes, carrots, onions and garlic.
- Ready twisted vegetables turn out to be a little “wet”, with liquid, so that they do not blur when frying, they need to drive 1 egg into them and mix thoroughly.
- Then season the potato “dough” with salt to taste, as well as black pepper. By the way, in addition to pepper, you can add any spices that you like, the main thing is not to overdo it.
- Now pour 2 tablespoons of flour. This serves the same purpose - to hold together future potato pancakes. Be sure to look - if there is a lot of liquid, then add another spoonful of flour to make the mixture more viscous. Mix everything thoroughly and turn on the medium heat on the stove.
- We put the pan on the fire and pour 2-3 tablespoons of vegetable oil. We heat the pan.
- While the pan is warming, we grate 150 g of any hard cheese on a fine grater.
- Cut a small bunch of dill as small as possible. In addition to dill, any herbs - parsley, cilantro, basil, rosemary or even a mixture of them - can be suitable for our purpose.
- Mix cheese and herbs.
- In a hot pan, spread a tablespoon of potato mixture: 1 potato pancake = 1 tablespoon.
- On top of every future potato pancake we lay out a filling of cheese and herbs.
- We close on top the potato pancake with another tablespoon of “dough”.
- Fry potato pancakes on each side for 2-3 minutes over medium heat. A little tip: if you see that the dough is “floating”, add some more flour.
- We put the finished pancakes on parchment paper so that the glass is excess vegetable oil. We shift potato pancakes on a plate and pour sour cream. We decorate with greens and eat or treat someone!
