Step cooking
- Wash the potatoes thoroughly and peel them. So that the peeled potatoes do not darken, put it in a container with cold water. Rub the potatoes on a medium grater to make long fibers. If you wish, you can cut the potatoes into pieces and mince them or grind them in a blender, but the taste of such pancakes will be different. If you use a meat grinder, they will be more granular, and if a blender - too homogeneous.
- Add 1/2 tsp to grated or chopped potatoes. salt and 2/3 of lemon juice. Lemon juice is needed so that the dough for potato pancakes does not turn black. Mix everything thoroughly.
- Then we transfer the potatoes into a colander to drain all excess liquid into a separate container.
- Put the minced meat in a deep container. It can be from one type of meat, or from several. Salt a little, add black ground pepper, oregano and basil. Next, squeeze 1 clove of garlic.
- We peel the onion from the husk, divide in half, and cut one half as finely as possible. We chop the chopped onion to the minced meat. Mix everything thoroughly.
- From the container into which the potatoes flowed, drain all the liquid, leaving the starch at the bottom.
- And put the potatoes in this starch.
- Add 1 egg and mix.
- Minced meat is divided into small portions.
- Cover the cutting board with paper towels in three layers. Next, take a small amount of potatoes, level it in the palm of your hand with a large flat cake. Then we take one piece of minced meat and also level the cakes on top.
- Cover with another layer of potatoes and seal the meat inside. It is advisable to do everything carefully so that the meat does not peek out on the sides.
- We lay the blank for the potato pancake on paper towels so that they absorb excess moisture. When all the blanks are laid out, they need to be blotted with a paper towel and on top.
- Add a little vegetable oil to the preheated pan and lay out a blank for the potato pancake on it. Fry for about 3 minutes, then turn over and fry for another 3-4 minutes. Then flip again. In total, potato pancakes with meat should be fried for 9-10 minutes over medium heat. You can cover the top with a lid.
- We lay the finished pancakes on a plate lined with paper towels. Optionally, you can sprinkle chopped herbs on top. Enjoy your meal.
