Step cooking
- We start with potatoes. It must be cleaned, rinsed well and chopped on a coarse grater. Please note that we do not use a fine grater or blender.
- After the potatoes, we immediately take the peeled washed onion and rub it on the same grater. Its juice will not allow the potatoes to darken, so do not hesitate with this stage. Of course, the color of the potato is purely aesthetic in nature and does not affect the taste of the dish, but why spoil the beauty if it is so simple to preserve it?
- Put in a cotton cloth or gauze folded in several layers. Press the resulting knot so that the juice stands out and flows out.
- Put the contents in a deep bowl.
- Add the eggs. Of course, it is preferable to use homemade eggs, their taste is deeper and more saturated, and since their mothers ate more natural products and walked in the sun, it is more useful. But, in general, it cannot be said that factory products are harmful, this is not entirely true.
- Take one teaspoon of salt, half a teaspoon of provencal herbs and the same amount of dried garlic. Pour seasonings into our mixture.
- Add one tablespoon of flour and mix the contents of the bowl thoroughly.
- We put the pan to warm up by pouring a little sunflower oil into it. Be sure to cover the entire bottom.
- When the pan has warmed up, spread the dough on it with a tablespoon. Form circles as if baking fritters.
- Fry potato pancakes on both sides until golden brown. Try not to overexpose them, so as not to overdry and get burned edges.
- When the potato pancakes are ready, put them on a napkin to remove excess oil. Serve with sour cream or any other sauce. You can add garlic and dill to sour cream, or mix mayonnaise with sour cream, add herbs and finely chopped cucumbers. The latter option will be quite light in taste if you choose low-calorie mayonnaise for the composition. In Belarus, potato pancakes are served with a bast. For its preparation, stewed smoked meats are combined with onions, caraway seeds, salt and water, and stewed for 20 minutes. There is an interesting version of a hearty dinner - serve potato pancakes with sausages and mushrooms. Do not forget to decorate the dish with herbs if it is not enough in the sauce.
