Step cooking
- Use a kitchen scale to measure 100 g of salt and 100 g of sugar, pour them into one container and mix.
- Peel one raw sugar beet and grate it in a large bowl on a medium grater. We use beets to make salmon a beautiful pink color. We advise you to choose small table beets. Such beets will give the marinade a bright, saturated color and make it sweeter.
- Pre-wash one bunch of parsley and one bunch of dill, dry them with a paper towel. Remove the thick stems and chop the greens finely.
- Add greens, salt and sugar to beets and mix.
- In a bowl with the rest of the ingredients, grate the zest of one lemon on a fine grater.
- Mix well. Marinade for fish is ready. Put half the marinade in an even layer on the bottom of the mold in which you will pickle the fish.
- If your salmon fillet is unpeeled, remove skin and bones from it. In this recipe, the fish does not undergo heat treatment, so go to the choice of salmon with all responsibility. Fresh fish has a pale pink color. The pulp of the fillet should remain elastic when pressed. And most importantly - fresh fish should not smell much.
- Put the cleaned fillet on the first part of the marinade in the mold. Lay the rest of the marinade on top of the fish so that the marinade covers it completely. Use a spatula to level and lightly compact the marinade.
- Cover the mold with cling film and put in the refrigerator for 8 hours.
- After the specified time, remove the fish. Salmon will turn beautiful pink. Peel the marinade and rinse it in cold water.
- Slice the fish half a centimeter thick each. Put the finished dish on a plate prepared for serving. Cut lemon into slices and garnish with fish. Cut the onions into thin half rings and sprinkle them on the finished dish. You can also use chopped greens for serving.
- For effective serving, place 1 tsp next to fish slices. salmon caviar. Pour the dish 1-2 tbsp. l olive oil, it can be replaced with any vegetable oil. Your carpaccio is ready. Enjoy your meal.
