Step cooking
Dough for loaf
- To make the dough, take a deep bowl. Heat 500 ml of kefir to a temperature of 35-40 degrees. To kefir add 1 tbsp. l sugar, 10 g of dried yeast and 2 tbsp. l wheat flour. Mix everything thoroughly. Cover the bowl with a towel and place in a warm place for 10-15 minutes.
- Take 4 eggs and separate the whites from the yolks. In 4 yolks add ½ tsp. salt, 150 g sugar and 50 g butter at room temperature, mix until smooth.
- Mix the matched dough with the egg mass.
- Next, constantly stirring, enter 1 kg, sifted through a sieve, wheat flour.
- Knead a soft, non-sticky dough. For smoothness, the dough should be kneaded for 10-15 minutes.
- Form a ball from the dough, put it in a deep bowl and cover with a towel. Let it go for 1-1.5 hours.
- When the dough fits and grows in size, knead it and divide it into 2 equal parts. Take a short, round baking dish. Put one piece of dough in the center of the mold. Divide the second part of the test into 12 parts, roll them into balls, lay out in a circle. Cover with a towel and leave to rise.
Dough for decoration
- Take 4 squirrels, add to them 2 tbsp. l sugar, 10 g of vanilla sugar and 2 tbsp. l vegetable oil. Mix everything thoroughly.
- Next, add 300 g sifted wheat flour and knead a uniform, soft dough. Cover the dough with a towel and leave for 20 minutes.
- Next, form blanks for decorating the loaf from this dough. You can make roses, daisies, leaves, spikelets and bunches of grapes, as well as swans and any decor according to your desire.
Loaf decoration
- Lubricate the loaf with a mixture to give it shine. To prepare it, take 1 egg and separate the protein from the yolk. In yolk, add 2 tbsp. l milk and whisk until smooth. Next, on the surface of the loaf, carefully place the prepared decorations.
- Place the loaf in the oven, preheated to 180 degrees, for 50-60 minutes. Cool the finished loaf completely, and then remove it from the mold. Loaf is ready, bon appetit.
