Step cooking
- Clean the Karasey from the scales, free from the entrails, rinse thoroughly with running water several times.
- Use a sharp knife to make longitudinal cuts on the back on both sides. The distance between the cuts should be 3-5 mm. So we cut all the small bones that evaporate during frying and almost disappear.
- We cut Karasey into portioned pieces, cut off the tail, we will not use it.
- We rub each piece with salt, give the fish a little time in order to salted. While the fish is salting, put the pan on the fire, pour the vegetable oil so that the bottom is covered, and let it warm.
- Each portion piece is dipped in flour on both sides, sent to the pan and sautéed until golden brown.
- We spread the fried fish on a dish, set aside, proceed to the preparation of gravy.
- Peel fresh tomatoes. To do this, dip them in boiling water for 2-3 seconds, then the skin is quickly and easily removed. Cut the tomatoes into two parts, set aside. If there is no cherry, you can use any other fresh tomatoes.
- I wash one or two bell peppers under the tap, peel off the internal seeds and tails, cut into strips.
- Two or three medium onions are peeled, cut into quarters.
- We send a clean frying pan to the fire, pour 50-70 ml of olive oil into it, when it warms up, put the chopped onion and fry until slightly golden.
- When the onion takes on color, send tomatoes and bell pepper to it, continue to fry.
- Add 1-2 tablespoons of soy sauce. You can not do this, but I think that the sauce will not spoil the dish. You can still add 2-3 tablespoons of thick tomato juice, but this is not necessary, do as you see fit.
- Stew vegetables for 10-12 minutes, and then add 500 ml of sour cream to the pan. Choose sour cream to your liking, you can take both fatty and non-greasy, according to your preferences.
- We continue to simmer the sauce for another 2-3 minutes, add a little salt and 2-3 pinches of ground pepper to enhance the taste, then reduce the heat. Here it is advisable to add parsley or dill greens to the gravy, after washing and cutting the ingredients.
- Pieces of fried crucian carp are laid out directly in a pan with sour cream sauce, each generously dipped in sauce with a kitchen spoon, pour into the inside, even in the gills, if the head is large.
- Continue to simmer for 1-2 minutes on low heat, after which the fish will be ready to serve.
