Ingredients
- White cabbage - 2-2.5 kg
- Medium-sized beets - 1 pc.
- Hot pepper - 1-2 pcs.

- Vinegar 9% - 1 tbsp. l

Step cooking
- To prepare the dish, you need 1 average head of white cabbage weighing about 2-2.5 kg. Better choose pickled cabbage. We cut the cabbage into several large parts. The head of cabbage itself must be cut off, because it is too hard, and is not used in cooking. We cut cabbage into large pieces into any enameled dishes. To do this, you can use a middle basin or a large pan.
- The dish will require medium-sized beets. It must be well washed and cut off the ponytails on both sides. Peel the beets and cut into strips.
- To add piquant cabbage, you will need hot pepper. It is necessary to cut off the tail and cut the pepper into several parts with a size of 1-1.5 cm. It is not necessary to get seeds. If you like more spicy dishes, then use 2 peppers, if you do not like strong spiciness, then one will be enough.
- In the bowl to the chopped cabbage add beets and hot pepper. We proceed to the preparation of the marinade. Pour 1.5 liters of water into a deep frying pan or stewpan and put on the stove. When the water warms up a bit, send 1 tbsp. l salt. Mix everything well so that the salt dissolves faster, and bring everything to a boil.
- In boiling water with salt, pour 1 tbsp. l vinegar 9%. Mix everything thoroughly and immediately remove from heat. The resulting brine, pour the cabbage with pepper and beets. Pouring ingredients must be exactly boiling marinade.
- We cover cabbage with a deep plate and put heavy oppression. In this case, a 3-liter can of water is used. We leave cabbage so insist at room temperature for 3-4 days. After 3 days, the cabbage is completely ready for use. It turns out crispy, very tasty and piquant. This appetizer is well suited to fish, meat, and any other first and second courses.
