Step cooking
- First of all, you need to completely cut the flounder: cut off the head, tail and fins, which is very convenient to do with culinary scissors, but you can do with a knife.
- Next, the carcass is cut in half in the longitudinal plane: from the belly to the upper fins.
- Now with a knife you need to completely clean the flounder from the scales. Then you need to separate the dark skin from the meat. To do this, it is better to use a knife. Hold the skin with one hand and cut it off from the meat with the other.
- Then the fish is sprinkled on both sides with salt, which is then rubbed a little by hand.
- After this, a similar operation is repeated, but with the basil: sprinkle, evenly distribute and squeeze a little.
- Now, from the side on which the skin was peeled off, you need to make transverse cuts with an interval of three to four centimeters. The cuts are deep, but not through, in any case, the knife rests in the bones on the back side, they do not need to be cut.
- Next, the lemon, peeled from the skin, is cut into small pieces with sizes equal to about 1 / 6-1 / 8 of the lemon ring.
- Pieces of lemon are inserted into the slots made in the fish.
- The garlic clove is cut into thin slices, which are also placed in these slots next to the lemon slices. It is possible not next to everyone, but so that the taste and aroma of garlic spread throughout the whole flounder carcass. The second carcass of the flounder is processed in the same way.
- Further, in the baking sleeve, pre-sized, both processed flounder carcasses are placed.
- On them, lemon juice is squeezed out of it.
- The exits from the baking sleeve are tightly tied with “clips”. The fish in the baking sleeve is sent to the oven for 20-25 minutes at a temperature of 190-200 ° C.
- After this time, the baking sleeve is removed from the oven and opened. Flounder is ready to eat, bon appetit!
