Squid Choice
When choosing a squid in the store, we look carefully, because it can be of two types. We need the carcass of the Far Eastern squid. Normal in appearance, medium-sized cephalopod mollusk pale purple. 5 to 6 carcasses usually go per kilogram of it. We take them.
Vegetable preparation
- Shred 3–4 cloves of garlic, put them on the squid.
- Cut into small slices 1 - 2 tomatoes or 5 - 6 cherry tomatoes.
- Cut the lemon in half, as we need juice ½ part of the lemon.
- We cut in half or clean 1 mandarin, as we will also squeeze juice out of it.
Squid preparation
- We need a kilogram of squid. Squid has the shape of a stocking, it is called the “stocking”. With a long sharp knife, cut the squid in half (insert the knife into the stocking and cut it on one side), unfold it. We clean it inside, everything that needs to be disconnected is cut off and discarded. The squid is clean. It is from the inside, and not from the outside, that we make incisions. We hold the knife with our finger, at an angle we do not cut completely, so as not to cut the squid through. We cut along the entire length, controlling the process with a finger. We’re not in a hurry.
- We retreat 3 to 5 mm from each other. We make cuts along the entire carcass. It is a long thin sharp knife that allows you to make such beautiful cuts. We make the second line of incisions obliquely, but already across the lines that we made.
- Cut the squid into strips or rectangles. Depending on how you cut them, this form will turn out either rings or cylinders. Add chopped squids on a plate while preparing vegetables.
Cooking squid
- We put the pan on the fire, pour the odorless, aromatic and taste vegetable oil. You need to pour so much oil that all the squids, when they are put in the pan, are in hot oil and can simultaneously seize and curl. Therefore, it all depends on the diameter of your pan.
- As soon as the oil boils, immediately spread the squid and garlic, evenly distribute them in a pan. They must be fried together.
- We will fry for 1 - 1.5 minutes on high heat, it is advisable to maintain a high temperature, since when the squid falls into the pan, the temperature drops and it will not curl. Far Eastern squid is very soft, so it does not need to be fried or cooked for a long time. When frying, the outer part of the squid begins to contract and twist the inside.
- Add salt, pepper to taste. Spread the chopped tomatoes. Pour juice ½ part of a lemon. We add lemon juice necessarily, because seafood loves lemon.
- Put squids and vegetables on a plate. If not all squids are twisted, that's okay. So they did not have enough temperature.
Cooking gravy
- Pour juice separated by squids and tomatoes in a pan during frying into a cup.
- Add a few drops of Tabasco sauce (1/3 tsp). Be sure to pour 1 - 2 tbsp. lolive oil infused with herbs. Squeeze the juice of 1 mandarin. We mix everything.
Serving dishes
- Squids laid out on a plate, pour the dressing, which is prepared on the basis of juices, so that they are saturated with additional aromas.
- At your request, you can decorate this dish with black sesame seeds or bright spices. In general, add what you would like.
