Step cooking
- First, we are preparing all the additional ingredients that will give the squid a greater taste and aroma. To do this, 2 large onions are peeled and cut into half rings with a sharp knife. The thickness of the chopped onion is approximately 2-3 mm.
- We clean the medium carrots and, using a large grater, rub it.
- Under running water, wash well 3-4 branches of dill and 2-3 branches of parsley. Finely chop them with a sharp knife. If you do not like greens, then you can not add it, or replace parsley with dill with other similar products.
- We proceed directly to the preparation of the squid itself. For the dish you will need 1 kg of seafood, which must be cut into rings.
- We put a deep pan with a thick bottom on the stove. We spread 1 small slice of butter on it and wait until it melts. If you want to get a delicate taste of the finished dish, then do not replace the butter with olive or sunflower.
- After the butter has completely melted, add the onion half rings to the pan. Fry the onion over medium heat for 2-3 minutes until it becomes transparent. Stir with a spatula from time to time so as not to burn.
- In a pan with lightly fried onions, spread the grated carrots. Stir the vegetables and continue to fry for 2 minutes. During this time, the carrots will become soft. Salt vegetables to taste, add a pinch of black pepper and 1.5 tbsp. l flour, which will make the sauce thicker. All mix well.
- In a pan, add chopped squid rings to vegetables and other ingredients and pour all 400 g of sour cream. It is better to choose a dairy product fatter, about 21%. After mixing all the ingredients, reduce the heat to a minimum. Close the pan with a lid and simmer for 7-10 minutes. It is important not to keep squids in the pan for more than 15 minutes, because then they will become "rubber".
- After 5 minutes, open the lid and mix the squids a bit. At this point, the sauce will already be a little thicker, while not too thick.
- After 7-10 minutes we taste the squids and, if necessary, add a little more salt. Add chopped greens and mix everything. After mixing the ingredients, remove the pan from the stove.
- Squids in sour cream sauce with onions are ready. You can serve them as an independent dish, or with any side dish, for example, boiled rice. Braised squid rings are very tender and soft.
