Step cooking
Squid preparation
- Thawed squid carcasses (500 grams) pour boiling water for 30-60 seconds. Cooking squid is not recommended, otherwise the rings in the batter will not turn out soft and delicate, as it should be. After a while, remove the clams from the boiling water and remove the peel, which easily rolls off the boiling water.
- Turn each abdomen in turn with the insides out and remove all unnecessary. Pay special attention to a transparent solid tube (chord), be sure to remove it.
- Remove the transparencies covering the squid carcasses outside and inside by tucking them with a knife or fingernail. Without films, squid meat is particularly tender. Prepared squids cut into rings with a width of 0.5-0.7 cm.
Cooking batter
- Break a chicken egg (1 piece) into a bowl and add a good pinch of salt. Beat the egg with salt with a whisk.
- Add plain pure water (70 ml) and highly carbonated water (70 ml) to the beaten egg. Whisk the contents of the bowl.
- Sift flour in small portions (about 300 grams) into a bowl, each time stirring the batter to make it look like a dough in consistency, slightly thicker than pancakes.
- Extend baking soda (1/2 teaspoon) with vinegar (1 tablespoon) and add to the batter. Mix well and the batter is ready.
Fry squid
- Put squid sliced into rings in the cooked batter and mix.
- Place a deep frying pan on the stove and heat. Pour in cooking oil for frying (100-170 ml) and let the oil warm up well. Spread squid rings with kitchen tongs in hot oil and fry on both sides until light golden.
- Put the prepared squids on a plate covered with paper towels so that the excess oil is gone. So in small batches, fry all the squid rings.
Decoration methods and serving options
Ready-made squid rings in batter can be served on one large dish or laid out on a serving plate with a slide. Serve different sauces separately. This can be spicy tomato ketchup, mayonnaise with garlic and lime juice or cream sauce, for the preparation of which you need to chop onions and green onions, garlic, add mustard, soy sauce, fat cream to them, and mix everything. Calamari in batter is ideal as an appetizer for live beer of different varieties.
