Step cooking
Prepare squid carcasses
- Take 8-10 whole squid carcasses, rinse them, and if necessary remove chitin plates.
- Check that the carcass inside is also clean, remove the “tails”. Insert a knife with a wide blade into the squid carcass. Use another knife to make several transverse cuts on the carcass. A wide knife inside will not allow you to cut the carcass completely.
Make a marinade
- Finely chop a bunch of fresh cilantro and transfer the greens into a bowl.
- Roll one lime a bit, cut it in half and squeeze the juice into a bowl of cilantro.
- Using a garlic squeeze, squeeze 4-5 cloves of garlic into the marinade. Add 40 g of sugar, 60-80 ml of fish sauce and 1-1.5 g of ground black pepper to the bowl.
- Stir the contents of the bowl and put it on the prepared squid. Gently mix the squid carcasses with the marinade, cover the bowl with cling film and refrigerate for 20 minutes.
Now cook the squid on the grill
- Preheat the grill and clean the grill.
- Dry the squid carcasses with paper towels. Lubricate the grill grate with a little vegetable oil. Put squid carcasses on the wire rack. Cook squids in direct hot heat, with the grill lid closed, frying them for 3 minutes on each side.
- Put the prepared squid on a plate. Cut the second lime and pour it over the carcass juice. Also, slices of this citrus can decorate the plates when serving.
