Ingredients
- Chanterelle mushrooms - 500 g
- Onions - 1 pc.
- Young garlic - 1 clove
- Greens (parsley, cilantro, dill) - 1 small bunch
- Sour cream homemade (fat) - 1 tbsp. l
- Olive oil - 2-3 tbsp. l
- Butter - 20 g
- Salt to taste
- Ground black pepper - to taste
Step cooking
- We well clean the chanterelles from grass, sand, earth and other debris so that it does not creak on the teeth. Rinse a little under running water.
- We put a frying pan on the fire. We send the chanterelles to the well-heated skillet and simmer, letting all the moisture come out of them. At the same time, we do not add either oil or seasoning, but salt a little so that the liquid comes out more intensively. It is recommended to drain the water coming out of the chanterelles several times so that the mushrooms become completely dry.
- At this time, peel the onion and finely chop.
- When all the moisture has come out of the chanterelles, we move them to one edge of the pan. Pour onion into the empty edge.
- Pour a little olive oil to the onion and fry until light golden hue.
- Mix the onions and chanterelles in a pan.
- Add some more olive oil and a slice of butter.
- Fry everything over medium heat, constantly stirring.
- My greens and chop.
- Peel the clove of garlic, crush and finely chop. You can skip through a special press.
- When the mushrooms are almost ready, add chopped greens and garlic to them in a pan. Mix well and fry for one minute.
- Add sour cream to the pan, again mix everything well.
- Add a little black pepper and salt if necessary.
- Fry for 30 seconds and turn off the heat.
- We put ready chanterelles on a plate and serve to the table. Enjoy your meal!
