Step cooking
- We send pike caviar to a sieve or colander with small holes. Squeeze and grind caviar through a sieve. Caviar will pass into the holes, and all the films we do not need remain in the sieve. We throw them away.
- After passing through a sieve, a clean, uniform caviar mass remains in the bowl. In a bowl with caviar, gradually pour 300 ml of boiled water.
- Stir the caviar with water well for 5 minutes. We do not drain the water, let the caviar stand for 30 seconds. up to 1 minute.
- Now drain the water. So we wash the eggs 2 to 3 times with cold filtered (purified) water.
- In a sieve we put gauze, folded in several layers or not too dense fabric so that the edges hang down through the sieve. Pour caviar from a bowl onto gauze.
- Leave the gauze with caviar in a sieve over a bowl, wait for the water to all glass. It takes about 1 hour. If you want faster, then you can squeeze the gauze.
- When the water drains, we dump the washed caviar onto a plate.
- To caviar add 1 tsp full of mountain. salt. Mix well until the salt dissolves.
- Then with a fork, we begin to beat the eggs until a foam forms.
- After the foam has appeared, add 1 tsp. vegetable oil (no longer needed, otherwise it will turn out liquid).
- Again, stir well, whisk.
- We send it to the refrigerator for 6 hours.
You can pour salt in several stages: add salt ½ tsp. salt, send to the refrigerator for 6 hours, try. If there is enough salt, then refrigerate for another 6 hours. If not enough, add more salt, mix, and refrigerate again. It all depends on your taste.
This method of salting with boiling water, unlike ordinary salting, is different in that in the first version, 6 hours for salting is enough, and in the second, you need to withstand caviar for at least 12 hours.
