Ingredients
- Meat - 1 kg
- Onions - 1 pc.
- Garlic - 3 cloves
- Salt - 3 tsp.
- Ground pepper - 2-3 pinches
- Spices for meat - 1 tsp.
- Adjika - 1 tsp.
- Ketchup - 2 tbsp. l
- Mustard seeds - 1 tbsp. l
- Mustard - 1 tsp.
- Potato - 700 g
- Spices for potatoes - 1 tsp.
- Vegetable oil - 2 tbsp. l
- Soy sauce - 1-2 tbsp. l
Step cooking
- We clear one large onion from the husk, wash it, chop it with a blender, put it in a separate container, for example, in a deep plate. Onions can be grated on a coarse grater.
- Three cloves of garlic peel, wash and pass through a meat grinder. Add chopped garlic to a bowl of onion. Here we also pour two teaspoons of salt, one teaspoon of seasoning for meat, which you will cook. In our case, it is pork.
- We also add 2-3 pinches of ground black pepper, one teaspoon of hot adjika, two tablespoons of ketchup and one or two tablespoons of soy sauce to the marinade. If you are not a supporter of spicy dishes, then you can not add spicy adjika to the marinade.
- Thoroughly mix all the ingredients in a bowl with a spoon and turn to the meat. In our case, this is a pork loin with ribs in the amount of one kilogram.
- On a piece of meat we make cuts along the ribs, but not to the very end, so that the piece keeps intact. Fat from meat is not required to be trimmed.
- We put the pork in a deep salad bowl, pour the prepared marinade there and rub the meat with our hands well. Cover the salad bowl with cling film and leave to marinate at room temperature for 2-3 hours. If you have the time, you can send it in the refrigerator for the whole night, and cook it the next day.
- Let's make another sauce. In a small container, mix 100 ml of sour cream, one tablespoon of mustard seeds and one teaspoon of regular mustard. Mix all the ingredients with a spoon, while we remove to the side.
- We peel 700 grams of potatoes, in each potato we make a flat cut from below so that it can be put. On top, cut the potatoes with a rose, not reaching the edge by 2-3 mm. Put the potatoes in a bowl, add one teaspoon of salt, the same amount of spice for potatoes, two tablespoons of vegetable oil. Mix the components.
- We put the meat in a deep baking dish, spread it with a fan. We put potatoes around the meat.
- In each meat cut we spread sour cream mustard sauce, evenly distribute the sauce throughout the meat.
- We cover the form with meat with foil and send it to the oven preheated to 200 degrees for 1 hour 20-30 minutes. It all depends on the capabilities of your oven.
