Ingredients
- Zucchini - 1 kg
- Chicken Egg - 2 pcs.
- Long loaf - 2-3 slices
- Dried garlic - 1 tsp.
- Vegetable oil - 50-70 ml
- Coarse salt - 1 tsp.
- Ground pepper - to taste
- Sour cream, sauce, onions - optional
Step cooking
- Wash and peel, as well as seeds and fibers, a large (kilogram) mature zucchini. After such cleaning, the “clean” weight of the zucchini will be 800-850 g. In a blender bowl, grind 2-3 slices of loaf into crumbs, and slightly dry for about 10 minutes in a bowl where the cutlet mass will be mixed
- Dissolve the cleaned pulp of the zucchini on a coarse grater in a separate cup.
- Add 1 tsp to the grated squash pulp. coarse salt (without slide), pepper to taste.
- Mix the contents of the cup thoroughly, cover and leave for a quarter of an hour so that the zucchini gives juice.
- Separate the protein from the yolk of two chicken eggs.
Important!For the preparation of Kolokifokeftedes only protein is used, and the yolk can be left for the manufacture of other dishes. It is perfectly stored in the refrigerator for up to two days under a thin layer of vegetable oil.
- After 15 minutes, when the zucchini has given a sufficient amount of juice, throw the zucchini mass onto a sieve or colander and squeeze it well.
- Mix the squash mass freed from excess liquid with bread crumbs.
- There, add 1 tsp. with a hill of dried garlic, and again mix thoroughly. You can replace dry garlic with a small head of fresh garlic, chopping the peeled cloves with a press. Pour the egg white into the mixed zucchini mass, knead again, let it brew for about 5 minutes, and form the patties.
Did you know?Optional. squash cutlets can be breaded in flour or breadcrumbs, but in this case you can do without breading.
- While the minced meat from zucchini is infused, heat the pan on a small burner flame. Pour 50-70 ml of vegetable oil into a hot pan and lay out the formed patties. Fry over medium heat for 3-4 minutes on each side (without covering) until golden brown.
- Ready cutlets to serve hot with sour cream and herbs.
