Step cooking
- Pour 2.5 liters of water into the pan, put it on the stove and turn on the fire. We wait until the water boils to cook pasta. In no case should you put pasta in cold water, because they will turn into porridge after cooking.
- Salt water to taste so that the pasta is not so fresh. We salt more water than we would salt the soup. This is important because then the pasta will be delicious. Now, when the water boils again after adding salt, put 400 g of pasta in it. Mix them and wait until the water in the pan boils again. Then we reduce the fire and cook their set time. It is good when pasta has grooves on the surface that spiral. Then pasta better holds the complement with which they are served. That is, pasta with grooves is always better. In the Italian version, this is called rigate. It’s best to buy pasta made from durum wheat. Then they do not boil and keep their shape.
- Another secret of cooking pasta: if you bought pasta and doubt their quality, it is better to pre-heat them in a pan. To do this, take a wide pan with a thick bottom, heat it over a fire and pour pasta into it. Calcine them on the fire for 1-2 minutes, stirring with a spoon. Then we transfer to the pan and pour boiling water, previously salting. Cook without a lid.
- It is better to cook pasta so that it is not overcooked, but slightly damp inside. Italians call this degree of readiness al dente. Then they will not affect your figure in the form of extra centimeters. The time for cooking pasta is indicated on the bundle. For example, if 12 minutes of cooking is indicated on a pack, it is recommended to cook them 2 minutes less. That is, they cooked for 2 minutes less, tried. If they still have light stiffness inside, set them aside. Then they will not damage your figure, but will be just delicious and healthy. If they are too raw - cook another minute. - We take a bowl, put a sieve on it and discard the pasta. After that, for safety, so that they do not digest (after all, the pasta remains still hot), we rinse them a bit with cold running water. Then the cooking process will stop, and the pasta will just wait in the wings.
