Ingredients
- raspberries - optional

- bottled water - 2.5-2.7 L
- granulated sugar - 180 g per 3 liter jar
Step cooking
- We carefully sort through all the berries used, removing twigs, leaves and other debris, as well as unripe or rotten fruits. In order for the compote to stand all winter and not go bad, use the freshest berries. We wash the selected fruits in running cold water. If you use cherries, then be sure to remove the seeds from them.
- In a clean and pre-scalded jar of boiling water, lay out the desired berries, while taking into account that the container should be filled only 1/3. If you do not cook compote for the winter, but to drink it today, then send the berries to the pan, filling it also only 1/3.
- On top of the berries add 180 g of sugar per one 3-liter jar. If you have too acidic fruits, then increase the amount of granulated sugar. However, in no case do not add more than 300 g of the sweet component, otherwise the compote will be too sugary, and it will have to be diluted with ordinary water, which will ruin its original taste. Instead of sugar, you can use fructose, honey, sucrose and so on.
- In the pot in which we cook the compote for now, we collect bottled water, filling the tank to the top. We send the pan with the contents to the fire, and then bring the liquid to a boil.
- As soon as the water begins to boil, take a crush for mashed potatoes and crush the berries. Thanks to this action, the berries will give their taste as much as possible, and the compote will acquire rich and amazing tasting qualities.
- Turn off the stove, close the pan with a lid and leave the compote at room temperature until completely cooled.
- Half the jar of berries and sugar is filled with boiling water, then we cover it with a lid and insist for about 5 minutes.
- We fill the free part of the can with boiling water, pouring it at the very neck of the container, and immediately roll the bottle with a lid. Turn the jar with the compote upside down and wrap it in a warm blanket.
- We leave conservation in this form overnight until completely cooled. Store the compote in a cool place.
