Cooking lentils
- Rinse 1 cup lentils under running water to get rid of debris. Pour it into the pan.
- Pour 2.5 cups of water or broth. Fluids should always be twice as much as lentils. Put on the stove. Before boiling, cook on medium heat, and after boiling - on a slow fire (this method is applied to all legumes). You do not need to close the pan with a lid. As needed, remove the foam that forms on the lentils and stir it.
- Cooking time depends on the variety of lentils (red is cooked 10-15 minutes after boiling; green - 30 minutes; black - 40-50 minutes and requires preliminary soaking for several hours). When the side dish is cooked, salt it to taste. Rosemary, bay leaf, sage, pepper, soy sauce or a tablespoon of olive oil will make lentil porridge softer.
Cooking vegetables
- Cut 1 onion into small cubes.
- Grate 2 carrots on a coarse grater.
- Add 3-4 tablespoons of vegetable oil to a hot skillet.
- Put the onions in the pan. Fry for 2-3 minutes. Then add the grated carrots to the onion. Fry for another 4-5 minutes.
Cooking side dish
- In a pan to the cooked lentils, add onions and carrots, as well as 2 tablespoons of tomato paste (optional). Mix well. Add 2-3 tablespoons of water and set cook on fire for 1-2 minutes.
- The dish is ready! When serving, sprinkle the side dish with finely chopped herbs to your taste. Enjoy your meal!
