Ingredients
- Flour 650 g
- Butter (or margarine) - 360 g
- Water - 220 ml
- Salt - 1 tsp.
- Vinegar 9% - 1 tsp.
Step cooking
- In a deep bowl, sift 650 g of flour through a sieve so that there are no lumps.
- On a coarse grater, grate 360 g of butter (can be replaced with cream margarine. Grate the butter in a bowl with flour and roll it in flour. To make it easy to rub, it should be from the refrigerator.
- In 220 ml of clean chilled water (from the refrigerator), add 1 tsp. salt, mix to dissolve the salt in water. Add to the water with salt 1 tsp. vinegar 9%, mix.
- Pour water with salt and vinegar into the oil crumbs with flour.
- Collect the dough in one lump, you do not need to knead it. Try to collect the dough quickly before the butter begins to melt.
- Give the dough a brick shape, place the dough in a plastic bag and refrigerate for 1 hour to cool the dough.
- An hour later, the dough became denser. Roll the chilled dough into a rectangle using a rolling pin. Sprinkle lightly on top of the flour and fold the resulting rectangle into 3 parts.
- Put the rolled dough on a plate covered with a plastic bag, cover with another one on top and send the dough in the refrigerator for 30 minutes.
- After 30 minutes, the dough is ready. Cut the dough in half, each part has a weight of 600 g. If you do not plan to cook anything, lay it in plastic bags and send it to the freezer, if necessary, thaw it.
What to cook from puff pastry
Various pies, croissants, pies, puffs, cheesecakes, bagels, pasties and many other pastries can be prepared from the resulting dough. One of the possible options is described below - the tongues cookies.
For the preparation of "reeds":
- Roll out 1 test briquette into a rectangle (the thicker the rectangle, the more layered the “Tongues” will be).
- Separate 1 chicken protein from the yolk and grease the dough on top. Sprinkle lightly with sugar.
- Cut the dough with a knife into rectangles (you should get 11 rectangles).
- Place cookies on a baking sheet covered with parchment paper. Place the pan for 20-25 minutes in the oven preheated to 220 degrees.
