- All ingredients (200 grams of green beans, 200 grams of champignon mushrooms, two bunches of herbs) are thoroughly washed under running water and then dried on a kitchen towel. We collect water in a saucepan and place on the hob, bring to a boil. For the convenience of consumption of the finished dish, green beans are cut in half.
- Then we prepare the mushrooms champignons, cutting them into small cubes. It is worth taking into account the fact that mushrooms during cooking are reduced and give a lot of liquid.
- We chop finely washed parsley and place in a separate bowl.
- Finely chop the spring onion feathers and add to the already chopped parsley.
- Cut 2 cloves of garlic for roasting and put it in a separate bowl. You can also skip it through a garlic press to get small pieces.
Cooking
- Add chopped green beans to boiling and salted water, and simmer for 10 minutes.
- We take the beans out of the pan, using forceps or a colander, and put in a bowl. It would be better to immediately fill it with cold water for two minutes. This simple tip will help the beans cool faster and better maintain their texture.
- After cooling the beans, you need to rid it of excess fluid.
- Preheat the pan and add 1 tablespoon of olive oil.
- We spread 200 g of chopped champignons with the heated oil, fry for several minutes, until the mushrooms decrease and give off excess moisture.
- After a while, the mushrooms are pushed to one half of the pan, and in the second place the chopped garlic, fry for no more than 30 seconds. It is very important not to overcook it, because it will easily spoil the taste of any dish!
- After that, we mix the ingredients in a pan and leave them to fry without a lid further together until excess moisture evaporates.
Dish assembly
Before serving, take a small deepened dish, pour mushrooms from the pan into it, take a wooden spatula and gently spread them over the entire surface. Carefully sprinkle the previously chopped greens over the entire surface of the mushrooms, mix thoroughly. Next, spread the boiled green beans, pepper and salt to taste.
