Step cooking
- First, spinach must be washed very thoroughly. To do this, put the greens in a colander, put it in a deep container and fill it with cold water. Leave for 5-10 minutes. Then we slightly raise the colander and move in different directions so that the water thoroughly rinses the greens. Repeat this procedure several times until the water becomes clear without sand. After that, we pump out the excess liquid, transfer the spinach to the salad dryer and, after spinning the centrifuge several times, we get rid of the excess water. If there is no such dryer, you can dry the greens by putting it on paper towels.
- Spinach can be torn with your hands or chopped on a cutting board. Sometimes spinach leaves are gathered in a bunch and sheared with kitchen scissors. It all depends on your personal preferences, but you don’t need to chop too finely.
- We put the pan on the stove, pour a little vegetable oil into it, about 2 tbsp. l It is better to use olive oil. So spinach will be even healthier.
- Without waiting for the oil to warm up well, put the chopped spinach in the pan. Sprinkle with salt on top. Keep in mind spinach will decrease in volume, so do not bother with salt. It is better to add later if necessary.
- Stir the greens and simmer over high heat for no longer than 1 minute. During this time, spinach will noticeably decrease in size. Put the finished spinach on a flat plate so that it cools down a bit.
- While the spinach cools, peel 2 cloves of garlic from the husk. In the cooled spinach with the help of the garlic we squeeze 2 cloves of garlic.
- Then add 4 tsp. natural yogurt. Instead of yogurt, you can use sour cream. It is better to choose low-fat yogurt or sour cream, but here it also depends on your personal preferences.
- Mix all the ingredients thoroughly. We try, and if necessary, add a little more salt. If you see that the spinach is too dry, feel free to add some more yogurt or sour cream. Enjoy your meal.
