Ingredients
- Rabbit meat - 1-1.5 kg

Step cooking
- The main secret to making a rabbit is a good marinade. As a rule, two types of spices are used for marinade: main and auxiliary. The main ones are onions, black pepper, bay leaf and salt, and the auxiliary ones are any other your favorite spices. You can marinate a rabbit in white wine, in red wine, in cognac, wine vinegar, etc. Very tender rabbit meat is obtained if white wine is used for marinade. We cut the rabbit carcass into small parts and make small cuts on each of them so that the meat is better marinated. The prepared meat is transferred to a deep bowl.
- Next, peel the onions from the husks and grind with a blender. If there is no blender, you can chop the onion manually. It is not necessary to grind too much.
- Pour the chopped onion into a bowl with meat. Next, we crushed several bay leaves there. If desired, ground bay leaves can be used. Salt and pepper to taste. After that, fill everything with white wine and mix thoroughly. You can also add other spices. Next, leave the meat to marinate for at least 2-3 hours.
- After the meat has been properly marinated, put the pan on the stove, grease it with vegetable oil and warm it well.
- We put the rabbit meat in a preheated pan, after removing the onions and spices from it, so that they do not burn in the roasting process. Fry the meat until golden brown.
- We lay the fried meat in a saucepan or a deep bowl, and then pour in equal proportions sour cream and mayonnaise, add 2-3 chopped garlic cloves and mix gently.
- Next, we line the baking sheet with foil and lay the rabbit meat on the baking sheet. Top with the remaining sauce. Covering with foil on top is not necessary.
- Preheat the oven to 200 degrees.
- Put the baking tray with meat in a well-heated oven and bake for 30-40 minutes. We serve baked meat on the table as a separate dish, or together with a side dish. As a side dish for the rabbit, you can use potato dishes, pasta, and grilled vegetables. Here you are limited only by your own preferences. Before serving, the meat can be sprinkled with finely chopped greens. Enjoy your meal.
