Ingredients
- Boiled potatoes - 1 kg
- Starch - ¼ part of the amount of grated potatoes (about 120 g)
- Onions - 1 head
- Breast - 200 g
- Salt, black pepper - to taste
Step cooking
- Rub the peeled boiled potatoes onto a fine grater. It is important to chop the potatoes on a grater, not a mixer or blender. Then you get the consistency necessary for the dumplings. If you still do not want to rub, then you can grind potatoes in a meat grinder.
- We spread the potatoes in a soup plate and level the surface with a tablespoon.
- With a spoon, divide the whole potato mass in a plate into 4 equal parts. We take out one part, and pour exactly the same amount of starch into the cavity, as before there were potatoes.
- Knead all the potatoes with starch into a uniform dough. First we do it with a spoon, then with our hands.
- It turns out a good, not sticky, smooth dough. Cut a small piece from it, roll it into a sausage. Cut the sausage into identical pieces.
- Roll the balls from each piece. In the middle of the balls we make a small indentation with the little finger.
- We spread all the prepared dumplings on a cling film or parchment.
- Cut the breast (200 g) into thin, long strips. We send it to a preheated pan.
- Cut the onion head into a small cube. When the brisket becomes transparent, add the onion slices to the brisket. Salt and pepper the contents of the pan until golden.
- In a large pan, bring the water to a boil. Salt. One at a time, lower the batch of dumplings into boiling water.
- As soon as the dumplings surfaced, we remove them with a slotted spoon in a plate.
- Sprinkle the toasted brisket with onion on top. The dish is ready - we serve it to the table. In some recipes, dumplings after cooking are advised to fry in a pan until golden.
