Ingredients
- Duck - 1 pc.
- Salt - ½ tsp
- Pepper - ½ tsp.
- Purple onion - 1 pcs.
- Cognac - 50 ml
- Butter - 50 g
Step cooking
- With wild duck, peel off along with feathers. Cut the breast and cut the fillet.
- Cut each fillet into 2-3 parts and beat off with a hammer.
- Add ½ tsp to the chopped meat. salt and ½ tsp ground black pepper.
- Peel the purple onion and cut it into half rings. Put the meat and onions in a container and refrigerate for 48 hours.
- After 2 days, remove the meat from the refrigerator and let stand a little at room temperature. Melt 50 g butter in a pan.
- Put slices of meat on hot oil and fry on both sides until golden brown.
- Next, add 50 ml of cognac to the meat, cover and cook over low heat for 10 minutes.
- Put the prepared meat on a dish. In the oil in which the duck was fried, fry the onion from the marinade.
- Put the finished onion on top of the meat. Serve the dish hot, bon appetit.
