Step cooking
- Wash young zucchini (6 pieces), cut off the ends and grate on a coarse grater. If zucchini has a very stiff peel, then it is better to cut it off.
- Salt grated zucchini to taste and mix well. Leave them for 15-20 minutes, so that the zucchini let out the juice.
- Rinse fresh dill (bunch) under running water and dry. Cut the greens not very finely, but not coarsely.
- Wash medium tomatoes (4 pieces) and cut into rings 3-4 mm wide.
- Peel the garlic (3-4 cloves) and pass through a press, mix with mayonnaise (200 grams).
- After 15 minutes, the squash started juice. Drain it through a colander, squeezing the squash mixture well. Transfer the remaining pulp into a bowl. In the squeezed grated zucchini, beat the chicken eggs (3 pieces).
- Add chopped dill, leaving a little for decoration. Pepper to taste and mix well.
- Gradually add flour to the mixture, mixing well each time. The dough should be thick. It may take 5-6 tablespoons of flour.
- Place a pan with a diameter of 24 cm on the stove and heat well.
- Pour vegetable oil for frying (2-3 tablespoons) into the pan, and when it warms up, put a portion of the dough and level it into a pancake 3-4 mm thick. Fry the pancake on one side to a light gold, and then gently, using a spatula, turn it to the second side and fry until tender.
- In this way, fry all the cooked dough, adding oil to the pan as necessary. In total, from the kneading dough, you will get 4-5 pancakes of this diameter. Allow the squash pancakes to cool completely and only then proceed to collect the cake.
- Put the first squash pancake on the dish and grease it with mayonnaise, evenly distributing it.
- Lay tomato rings tightly on top of each other on mayonnaise.
- Cover the tomatoes with the following pancake and repeat the steps: grease with mayonnaise and lay out a layer of rings of tomatoes.
- So do the rest of the zucchini pancakes. Lubricate the uppermost last pancake with mayonnaise and garnish with chopped dill. But if you wish, you can also lay a layer of tomatoes, and then garnish with dill. Leave the assembled cake from the zucchini for an hour to soak, put in the refrigerator, and then serve it as a snack, cut into portions.
