Step cooking
- First you need to prepare the ingredients, peel and rinse with water zucchini (1.5 kg), carrots (2 pcs.), Onions (250 g) and garlic (5 cloves). And also pre-prepare the required amount of the remaining ingredients.
- Zucchini, carrots and onions cut into large cubes, about 1 cm per 1 cm. Pour vegetable oil (75-100 g) into a pan with a thick bottom, add chopped onion and fry for 1-2 minutes.
- Then put the carrots, zucchini, mix the vegetables well and continue to simmer for about 15 minutes, stirring them periodically. No spices need to be added at this point. Instead of a pan, you can take a large pan with high sides or a cauldron.
- After 15 minutes, add tomato paste (125 g), mix and continue to simmer another 30 minutes, not forgetting to periodically mix future squash caviar.
- Rub the peeled garlic on a fine grater or pass through a press, lay out to the rest of the ingredients, mix, let cool slightly and pass through a meat grinder or use a blender, as it is convenient for anyone.
- Add salt (1 tbsp.), Sugar (1 tbsp.), Ground black pepper (0.5 tsp.), Mayonnaise (125 g) to the caviar obtained, mix thoroughly, cover the pan with a lid and continue to simmer on low heat for another 10 minutes, periodically mixing the caviar. You can adjust the taste of the finished dish yourself by adding more or less sugar, salt and pepper.
- The finished dish should cool slightly and you can safely serve it to the table. If you want to put such caviar in jars for the winter, then you need to stew for 40 minutes, then add table vinegar (1 tbsp.), Mix thoroughly again and place in sterilized jars.
