Ingredients

Squash 1,5 kg
Carrot (medium size) 2 pcs.
Onion 250 g
Garlic 7-10 teeth
Tomato paste 125 g
Mayonnaise 125 g
Salt 1 tbsp. l
Ground pepper 0.5 tsp
Sugar 1 tbsp. l
Vinegar, 9% 1 tbsp. l
Vegetable oil 75-100 g

Step cooking

  1. First you need to prepare the ingredients, peel and rinse with water zucchini (1.5 kg), carrots (2 pcs.), Onions (250 g) and garlic (5 cloves). And also pre-prepare the required amount of the remaining ingredients.

  2. Zucchini, carrots and onions cut into large cubes, about 1 cm per 1 cm. Pour vegetable oil (75-100 g) into a pan with a thick bottom, add chopped onion and fry for 1-2 minutes.

  3. Then put the carrots, zucchini, mix the vegetables well and continue to simmer for about 15 minutes, stirring them periodically. No spices need to be added at this point. Instead of a pan, you can take a large pan with high sides or a cauldron.

  4. After 15 minutes, add tomato paste (125 g), mix and continue to simmer another 30 minutes, not forgetting to periodically mix future squash caviar.

  5. Rub the peeled garlic on a fine grater or pass through a press, lay out to the rest of the ingredients, mix, let cool slightly and pass through a meat grinder or use a blender, as it is convenient for anyone.
