Ingredients
- Zucchini - 2-2.5 kg
- Parsley - bunch
- Hot pepper - to taste
- Black peppercorns - 1-2 tsp.
- Garlic - 12 cloves
- Bay leaf - 8 pcs.
- Water - 1.5-1.8 L
- Sugar - 180 g
- Salt 3 tbsp. l (with a slide)
- Vinegar 9% 250 ml

Vegetable preparation
- Rinse approximately 2-2.5 kilograms of zucchini under running water and dry. Cut the zucchini into 2 cm thick circles. Large slices of zucchini cut in half.
- Peel and rinse the garlic. For the dish you will need 12 cloves. Slice the garlic into thin slices.
- Rinse hot peppers (to taste) and clear of seeds. Slice the pepper into strips. Wash and dry a bunch of parsley.
Harvest of zucchini
- From the declared amount of ingredients, you will get 4 cans of zucchini in 1 liter. Wash and dry the cans thoroughly. At the bottom of each jar, lay out 2 bay leaves and black pepper with peas to taste.
- Fill the jars with layers of zucchini, parsley, garlic and hot pepper, alternating them. Do not make the layers too thick. In a large saucepan, heat 1.5-1.8 liters of water. When the water boils, fill it with zucchini.
- Cover the jars and leave for 15 minutes.
- After this time, drain all the water from the cans into the pan.
- Add 180 grams of sugar, 3 tablespoons (with a hill) of salt and 250 milliliters of vinegar to the same water. Mix well.
- Put the marinade pot on the fire and bring to a boil. Fill the jars with zucchini with hot marinade and cork tightly with pre-sterilized lids.
- Turn over the blocked cans and place on the lid. Check for leaks. If the jar is not rolled up tightly, it is better not to store it, or to boil over again.
- Cover the jars with a blanket and set to cool completely. If you do not comply with this rule, there is a high probability of bloating cans or moldy products in them. Store zucchini in a dark, dry, cool place for no more than 1 year. The dish is ready. Enjoy your meal!
