Ingredient preparation
- We wash 2.5 kg of zucchini, cut them to the height of a 1-liter jar so that they enter there while standing.
- Each zucchini is cut in half along, then in half, cut into slices. It turns out 8 long slices from each zucchini.
- Peel and wash 4 cloves of garlic. Cut them into small pieces.
- Wash 4 bay leaves, 1 bunch of parsley, 8 leaves of currant, 1 leaf of horseradish.
- My 4 dill umbrellas. It is better to take dill umbrellas - they have the most dill oil. If there are no umbrellas, take what you have.
- Divide the horseradish leaf into 4 parts. We will put 1 part in each jar.
- We cut each sprig of parsley into 2-3 parts. Divide the parsley evenly into 4 banks.
Cooking marinade and rolling zucchini
- Pour 2 liters of water into the pan, put on fire. Add 100 g of salt and 125 g of sugar. Let the water boil. After boiling, pour 140 ml of vinegar. Let it boil for a few minutes.
- Banks washed with soda solution. Do not sterilize, as they will be sterilized with zucchini in the future. At the bottom of each jar we put 1 bay leaf, 3-4 peas of allspice, 1 clove of finely chopped garlic, 1 dill umbrella, 2 currant leaves, 2-3 sprigs of chopped parsley, 1/4 of the horseradish leaf.
- We put sliced zucchini into jars. We do not stack it tightly so that there is enough marinade in the jar, then the zucchini is fragrant and spicy.
- Pour the boiling marinade first to half, and then to the very top. So the banks do not crack from boiling water.
- We cover (do not roll up) the lids of the jar, send them sterilized. At the bottom of a wide pan we put a cloth, you can take a towel. We put the banks in the pan. Pour hot, but not boiling water between banks. Water level should be above the middle of the can. We put the pan on the fire. We sterilize 10 minutes from the moment of boiling water.
- By taking out cans of 1 each, roll them immediately while they are hot.
- Turn the top upside down.
