Ingredients
- Eggplant - 2 pcs.
- Olive oil - 50-60 ml
- Garlic - 2 cloves (large)
- Salt to taste
- Red ground pepper - 1/3 tsp
- Cilantro (fresh) - 20 g
Step cooking
- 2 eggplants must be washed and dried with a paper towel. We cover the baking sheet with parchment paper and put eggplant on it. They must be placed in an oven preheated to 180 degrees and baked for about 40 minutes until they become soft.
- 2 cloves of garlic, peel and grind with the help of garlic. You can also rub it on a fine grater.
- Put chopped garlic in a small heat-resistant bowl, add salt and 1/3 tsp. ground red pepper. If desired, ground pepper can be replaced with dried and fresh capsicum (then it needs about 7-8 g).
- Mix everything, cover the bowl with foil and place in a preheated oven for 40 minutes.
- After the eggplants have cooled, cut them in half along the back of the knife and separate the flesh from the peel. Grind the pulp to a state of small pieces. The second way: place the pulp in a blender and grind to a puree consistency.
- In the bowl, mix the crushed baked eggplant and oil with garlic.
- There we add about 20 g of crushed cilantro and add if necessary. Mix the mixture well and leave it under the lid for an hour. Caviar can be placed in the refrigerator.
